Laravel 5.4 extend/ override \Symfony\Component\HttpFoundation\File\File class

I want to alter the behaviour of the \Symfony\Component\HttpFoundation\File\File::getMimeType method. Therefore I want to extend/ override the \Symfony\Component\HttpFoundation\File\File class. How can I achieve this?
