How to build class diagram using Php MVC framework (Laravel 5.4)

I spend most of my time in designing an application than coding especially java and c#. Currently I should work on a big project using Php framework call laravel. Laravel is using the MVC architecture.

I want to design a class diagram of an entire application. how do I accomplish this? Since the controller and the model are the only classes available in laravel probably that's a good starting point.

I tried to simulate this using a small project call task management application which has the following requirements:

To keep it simple, Organisation uses a task management system to track the tasks accomplished by their employees. User can add tasks for themselves and management would generate some reports. Is this a Good way of modelling a class diagram otherwise I need an advice.
