How to save data and make new tab with clear data

I have 2 tables: Users and Sales. I what to save Sales data for 1 single month and create new tab with clear sales but not Users, but I should always have opportunity to return to any previous month and watch/edit Sales. Similar like in google tables. How to do this task, I mean at least in theory what the best way to do it?
