laravel: create and call my own API

I'm working on Laravel 5.3 and I'm thinking on the right way to implement the following:

1. I need to create my own API so Ill be able to call it (ajax) with parameters (probably with GET), and after IP authentication (so Ill be the only one who can call it) Ill return JSON as an answer. your help will be appreciated.
2. I thought to do it with subdomain (do you think its better? I might need to split it for different servers later on), if so, should I create a new Laravel site for that?

3. Ldo you recommended to implement it using REST API? if not, can you please recommended any library you are using with? (there are so many):
